Lemon Meringue Pie






3 egg yolks

1 1/2 cup sugar

1/3 cornstarch

1 1/2 cups of water

3 tbs.  butter

2 tsps. grated lemon peel

1/2 lemon juice


3 egg whites

1/4 teaspoon  cream of tartar

6 tbs. sugar

1/2 tsp vanilla

1 pie shell



In bowl beat egg yolks. In saucepan mix sugar and cornstarch then gradually stir in water.

Cook over medium heat stir constantly until mixture  boils and thickens.

Put mixture into bowl with eggs yolks  stir then pour back into saucepan Stir for 2 minutes over medium heat. Remove from heat then stir in butter , lemon peel and, lemon juice.


Beat egg whites and cream of tartar with mixer on high speed until foamy

Beat in sugar 1 tbs at a time.

Beat until stiff and glossy

Beat in vanilla.

Use a spatula to spread meringue  on top of filling.

Bake  until meringue is light brown

Let cool then refrigerate.
